Process
Castillo Naranjal from the Hernández Family, grown at Nogales Coffee Farms in Colombia. Rooted in rich soil and steady climate, this coffee carries natural sweetness, soft fruit, and balance from the start.
The cherries move through a bold Termoshock—90°C water for 60 seconds—locking in clarity, unlocking sugars, and setting the tone for controlled fermentation and amplified aromatics.
From there, a 7-day anaerobic fermentation unfolds in sealed tanks, driven by the coffee’s own sugars and a precise yeast-to-juice balance. The result: layered fruit, rounded acidity, and a smooth, weighty texture that still honors its terroir.
Sun-dried for 15 days, then rested in whiskey barrels for another 15, the coffee absorbs subtle warmth—wood, sweetness, quiet spice. Finished with a 30-day stabilization in GrainPro, everything settles into place.

Farmer History
Nearly 80 years ago, Ricardo Hernández and Concepción Castillo settled Los Nogales in Pitalito, Huila—driven by love, land, and the belief that coffee could outlive them. Eight children grew from that soil. One would carry the name forward.
Born in 1952, Ricaurte Hernández learned farming as a language of humility, generosity, and vision. In Valle del Cauca, he met Suldery Arango—coffee in her blood, purpose in her hands. Together, they built more than a farm. They built a legacy. In 2005, Los Nogales took first place at Colombia’s Cup of Excellence.
Ricaurte pushed forward—innovation, risk, progress—until his life was cut short in 2013 by the violence of the countryside. What remained was resolve.
When selling felt easier, Oscar Fernando Hernández chose otherwise. The youngest son stayed.
Today, Los Nogales stands as a modern coffee estate—rooted in sustainability, driven by research, shaped by technology, and guided by respect for the land.
