PROCESS DESCRIPTION:
The process involves hand sorting ripe Huila Colombian cherries, 24-hour pre-fermentation in plastic bags, followed by 24 hours in cherry. Beans are co-fermented anaerobically for 5 days with mucilage, yeast, and berries (raspberries, blackberries), enhancing the honey process. The co-ferment process of coffee involves fermenting coffee beans with added ingredients like fruits, yeasts, or spices to enhance and create unique flavor profiles, and in the honey process the beans are dried with some of their sticky mucilage still attached to develop sweeter, fruitier flavors.Drying occurs mechanically for 10 days, then stabilization in GrainPro bags for 5 days. The result is a vibrant cup with notes of berries, caramel, and white chocolate.
